I a large cast iron pot, heat oil on medium heat. Add onions; saute' until golden brown, 7 to 10 minutes, stirring frequently. Add the remaining ingredients, and bring to boil. Reduce heat and simmer , uncovered till thicken. It normally thats about 2 - 2 1/2 hours. Let cool to room temperature, and puree in small batches. A blender or food processor will look perfectly. Store in refrigerator for up to two (2) weeks. |

To increase the sweetness add 1/4 - 1/2 of granulated white sugar. There're a number of ways to add heat, the most common would be to add 1 - 2 tsp cayenne pepper. I personally like the chipotle pepper taste for its added smokey flavor. Whole Foods carries a ground version that works great. 1 - 3 tsp depending on your taste. Make sure to us fresh orange juice, it makes all the difference.
