Chef Notes: |

Makee sure to trim-off all excess fat before grilling. While some fat addes to the flavor, excess fat addes fuel to the fire - flair-ups. Flair-ups always make for a bad experience when it comes to grilling. I like to serve my chops with Bobbie's homemade Tomato Chowchow. The recipe is listed on the American Barbecue Systems recipe page.
